I went to my first baby shower on Saturday and for this occasion I prepared these cute coconut cupcakes. It is going to be a baby girl, so it had to be pinky! I used my pink polka dot baking cups and I found these cute pink feet which made of rice paper and they are edible! (only bit complicated to cut out) Cupcakes are delicious also because they have extra secret filling which makes them moist.
Ingredients
(for 12 pieces)
Dough:
- 1 egg
- 1 dcl oil
- 70g sugar
- 100g flour
- 25g of maizena
- 20g baking powder
- 80g coconut
- pinch of salt
- 6 spoons of white yoghurt
Filling:
- 50g white chocolate
- 30 g of butter
- 2 spoons of double cream
Icing:
- 100g of butter
- 100g sugar
- 4 spoons of condensed milk
- 80g coconut
Directions
Mix together in a bowl the egg, oil and sugar. In a separate bowl, mix the dry ingredients (flour, maizena, baking powder, coconut and salt). Pour the dry mixture to the wet mixture slowly and in the end, add the yoghurt. Mix well together and fill the cupcake baking tin only to 2/3. Bake at 175 °C for 20 minutes. Take the cupcakes out and let them cool down. Cut a 2cm circle 2cm deep in the top of each cupcake. Carefuly remove tops and set aside. Prepare the filling by mixing all the ingredients in a steam bath. Fill the cupcakes with the filling and put the tops back on the cupcake. Prepare the icing by mixing butter and sugar together, add the condensed milk and the coconut. Spoon the icing into a piping bag and pipe the icing using a spiralling motion onto the cupcakes.
