I am a huge fan of pumpkins and I am really enjoying their season right now! :) I already showed you my favourite recipe for butternutsquash soup but that is not the only way. This recipe is full of flavours and the soup smells great! Actually, not only smells, also tastes!
Ingredients
- 1 butternut squash
- 2 onions
- 2 spoons of coconut oil
- 500ml of chicken stock
- 400ml of coconut milk
- salt and pepper
- 1 spoon of grated fresh ginger
- chilli
Directions
Fry the chopped onions in a pot on the preheated coconut oil. Add the butternut squash, cut to smaller pieces, and ginger and cook it for 2 minutes and then add the chicken stock and coconut milk, let it boil for about 10 minutes (pumpkin has to be soft). Season with salt, pepper and chilli and blend everyhing in a mixer until smooth. I recommend to serve it with nice-freshfromtheoven-wholegrain bread, yummy! :)
