Cauliflower soup with gorgonozola

Today, yet another soup for cold winter days! Again, it is pretty thick, but that's because we like it this way. You can control the thickness by adding more/less liquid. Very healthy, quick, simple and tasty! (as always :) )






Ingredients


  • 1.5 cauliflower
  • 500 ml of chicken stock
  • 200ml of white wine
  • 1 onion
  • 50g of butter
  • handful of parsley
  • thymian
  • salt and pepper
  • gorgonzola

Directions

Take a pot, melt down the butter and fry the chopped onions. Add the cauliflower cut to smaller pieces and mix it for about 2 minutes. Add wine, wait till it starts to boil and then add the chicken stock, chopped persil and thymian (I let you choose the amounts, does not need to be too much). Season with salt and pepper and let it all boil for about 10-15 minutes. Use the blender to mix everything together. Before you serve it, cut the gorgonzola to smaller pieces and place them in the middle, it will melt down in the hot soup and gives it bit special taste! :)
