Salmon and vegetable soufflé

I guess everyone knows the typical ways how to prepare/cook a fish. But what about soufflé made of fish? I came across this great recipe (dont remember anymore where did I read it), and I thought, what a great idea! And it is not complicated, very refreshing and you can still move after having this for your lunch. 




Ingredients


  • 300g salmon
  • 1/2 brocoli
  • 1/2 cauliflower
  • handful of persil
  • 3 eggs
  • 350ml of cream
  • handful of grated cheese (emmentaler)
  • salt and pepper

Directions

Cut the brocoli and cauliflower into smaller pieces and cook it for 2 minutes in boiling water. Cut the salmon as well, take a round baking pan (cca 25cm diameter) and place the vegetables and salmon into the pan. Mix in a separate bowl the cream, eggs, chopped persil, cheese, salt and pepper. Pour it onto the baking pan. Bake for 30 minutes at 180°C.
