Egg Sandwich Spread

My mom gave me after Eastern /almost/ homemade eggs from our neighbours and they look and taste amazing. Normally, I don't buy everything bio, but with eggs I was always careful to buy bio eggs knowing that those chicken have somewhere probably and hopefully better life and wanted to support that. But still, the bio eggs from a shop were never that yellow and tasty like the eggs from our neighbours. Judge yourself, look at the egg spread that I prepared:

Zucchini muffins

I was very lazy last weekend and didn't cook much. But, I still had couple of zucchinis in my fridge (from south of France, proper bio quality :) ) and I decided to try the salty muffin idea, but without any flour. Here is the result and I must say, what a great idea! And there are really  no limits here, you can replace the zucchinis with aubergine or pumpkin, use different spices, different cheese etc.

Guacamole

Today, I decided to share with you my jewel!! Guacamole!! And even a Colombian guy said, that my guacamole is better than what his mom is preparing! :) I have to share with you also a short history, how did I mastered this recipe. One day, I decided with my boyfriend to learn how to prepare guacamole. But there are so many different recipes on the internet, and we couldn't agree on one, so we made a competition out of it :) It ended quite good, just way too much of guacamole that night. But I guess we discovered the ingredients and their proportions and we still prepare it very often at home as a simple and quick dinner, because we LOVE it! :) This ingredients give you nice bowl of guacamole - enough for 2 people for dinner, or for more people just as snack.

Spinach and cheese muffins

Today I am going to show you how to prepare salty muffins! Recently I was preparing couple of meals for a birthday party. I had chosen something sweet and I needed also something salty and wanted to use my muffin pan. Thats how I started to research salty variations of muffins and there are so many of them. I chose the one with spinach and 3 (!!!) kinds of cheese - what can go wrong there? :) It is very easy and delicious!
