Spinach and cheese muffins

Today I am going to show you how to prepare salty muffins! Recently I was preparing couple of meals for a birthday party. I had chosen something sweet and I needed also something salty and wanted to use my muffin pan. Thats how I started to research salty variations of muffins and there are so many of them. I chose the one with spinach and 3 (!!!) kinds of cheese - what can go wrong there? :) It is very easy and delicious! 





Ingredients

(for 12 muffins)


  • 300g of flour
  • 80g of melted butter
  • 1 egg
  • 250 ml créme fraiche
  • 20g baking powder
  • olive oil 
  • 1 onion
  • 200g of spinach
  • 100g of mozzarella
  • 40g of parmesan
  • 100g of blue cheese

Directions

Preheat your oven to 200°C and wipe your muffin pan with bit of olive oil. Then you can heat-up your frying pan with olive oil and fry the finely-sliced onions. Add washed spinach leaves for a short moment (approximately 1 minute, they will absorb the heat and get much smaller). Wait till they get cold again and mix them with all 3 kinds of cheese - grate it before. In another bowl, you will prepare your muffin dough - by mixing the flour, melted butter, egg, créme fraiche and baking powder together. Then you can mix together both parts. Your muffin dough is ready and you can start filling the muffin pan. When you are finished, put it in the oven and let it bake for 20 min. I recommend to eat your muffins fresh and warm. If you have to wait till the next day, you can always warm it up in the oven.
