Lentil Soup

I swear that this is the best soup you are ever going to eat! :) But little bit of history first. When we were moving my friend Jakub prepared the soup for us since we were not able to cook anything in the kitchen. It was so nice to have a hot bowl of soup with fresh bread and beer :) So I had to learn the recipe and now I want to share it also with you guys!!! After you try it out, your life will be suddenly defined as "before the lentil soup" and "after the lentil soup" :)) 

Ingredients

  • 250g green lentils
  • 3 carrots
  • 6 middle sized potatoes
  • 4 cloves of garlis
  • 1 can of peeled tomatoes
  • 1 big onion
  • salt, pepper
  • marjoram
  • sweet paprika
  • chilli
  • butter + oil

Directions

Chop the onion and fry it in a big pan on hot oil and butter. Make sure that onion is getting almost brownish, then add the tomatoes. Cook for a while and add around 2 litres of water (depending how big is your pan). Put the lentils in and cook till the lentils are soft (I had green lentils and it took around 40min and I did not put them before in the water). Then add the carrots cut into small circles, let it cook for 10 minutes and add the potatoes and garlic. Flavour with salt and pepper, majoran and sweet paprika. I added also little bit of chilli cayenne (as we say at home: for little bit of kick :)) ). Wait couple of minutes, check if the potatoes and carrots are soft and you can serve your soup. Fits perfectly with beer!!!

Cauliflower soup with gorgonozola

Today, yet another soup for cold winter days! Again, it is pretty thick, but that's because we like it this way. You can control the thickness by adding more/less liquid. Very healthy, quick, simple and tasty! (as always :) )

Express Green Pea Soup

I promise you, this is going to be the fastest soup ever!!!! Probably it is not the most sophisticated recipe, but if you are craving for something warm AND tasty, and your fridge is empty, then this is the recipe for you (everyone has green peas in the freezer and pesto at home).

Crème de champignons

I dont know how about you but I love eating soups in winter, cold weather. And when I say soup I mean really thick cream. One of my favourite is crème de champignons which was our Saturday lunch and it was so good that I have to share my recipe with you! Also, you do not need to eat anything else, because it's really fulfiling! With these amounts you can have 2 main courses (quite big portion).

Butternut Squash Soup

Winter is slowly approaching (although we have still wonderful indian summer) but the soup season is almost here! So I am going to show you my recipe for the most favourite soup at my home - butternut squash soup. It is probably less typical than pumpkin, but basically it is almost the same. It has yellow to beige skin and orange pulp and in case you are still not convinced - it is a great source of fibre, vitamin C, manganese, magnesium and potassium. My soup is quick, easy, delicous and even great for healthy eaters.

Tomato soup

This is one of my most favourite soups. The recipe comes from my mom and she used to cook this soup for me over and over when I was studying for my final exams. That's why it is quite sentimental and tastes like my childhood. Now, don't expect here any fancy recipe made from fresh tomatoes. This comes all from can/box but on the other hand, it will have the same taste also in the winter. It is super easy and super fast, takes around 15 min to prepare and it's perfect when in the winter when you need to warm up your stomach :) The ingredients will serve around 4-6 people (depending how hungry they are :) )
