Winter is slowly approaching (although we have still wonderful indian summer) but the soup season is almost here! So I am going to show you my recipe for the most favourite soup at my home - butternut squash soup. It is probably less typical than pumpkin, but basically it is almost the same. It has yellow to beige skin and orange pulp and in case you are still not convinced - it is a great source of fibre, vitamin C, manganese, magnesium and potassium. My soup is quick, easy, delicous and even great for healthy eaters.
Ingredients
- 1 butternut squash
- 2 sweet potatoes
- 2 oranges
- 20g butter
- 1 onion
- 4 cloves of garlic
- 1/2 lime (juice)
- 1 liter of vegetable bouillon
- 1/4 teaspoon of nutmeg
- oil, salt and pepper,
- chilli
- spring onions for decoration
Directions
Warm up a big pot, add the oil and fry the onions and garlic. Then peel the skin of the butternutsquash and take out the seeds. Cut it into small pieces alongside with the peeled potato. Add it to the pot and fry it for 2-3 minutes. Add the salt, pepper and nutmeg. On the side heat up the vegetable bouillon and when it starts to boil, pour it in the top (with this amount, the soup is going to be very thick, if you want more liquid soup, add more). Reduce the heat and cover it up. Cook for about 10-15 minutes (check if the potato and butternut squash are soft). Remove it from the fire and mix everything together. Afterwards, add the juice from 2 oranges and 1/2 of lime, add butter and chilli and chopped spring onions. Flavour to your taste. This portion should be enough for 4 people even if they are hungry :)
