I really like seasonal cooking/baking and always try to buy fruits and vegetables which are typical for every season. Anyway, tomatoes that you buy in winter do not taste at all... And since this is the season of apples, I was looking for a nice cheesecake recipe. I found my inspiration on my favourite foodblog - dulce de leche and here is my version:
Ingredients
Pastry:
- 300g biscuits
- 150g butter
- handful of pecan nuts
Creamy filling:
- 500g mascarpone
- 3 spoons of brown sugar
- 3 eggs
- 1 teaspoon of cinnamon
- 3 apples
Top layer
- 4 apples
- 3 spoons of brown sugar
- 1 teaspoon of cinnamon
- 1/2 lemon
- 40 g butter
Directions
Prepare the pastry by crashing the biscuits and pecan nuts. Mix in the melted butter and tip into a 25cm baking form. Use your fingers to press the pastry evenly. Keep it in the fridge while preparing the creamy filling. Peel and great the apples. Mix it with mascarpone, sugar, eggs and cinnamon. Pour the filling over the biscuit base. Bake it in the oven for an hour at 160°C. Prepare the top layer by melting down the butter on a frying pan. Spread the sugar evenly and wait till you have nice caramel coulour. Add the apples cut to slices as on the picture and season them with cinnamon and lemon juice. Cook for about 10 minutes. When the baking is over, place the apples on the cheesecake and cover them with the caramel juice from your frying pan. Cool it down for couple of hours and then its ready to be served!
