The last weekend was full of new recipes and meals. As you probably noticed, the spelt flour is recently very 'in' and everyone says it's supposed to be healthier than normal flour. So I bought one 1kg and here is my version of healthy crêpes:
Ingredients
(this amounts are not exact, you have to feel that the mixture has the right structure for crèpes, I never use any recipe and I keep adding the ingredients until I reach this feeling :) )
- 2 mugs of milk
- 2 1/2 mugs of spelt flour
- 2 eggs
- pinch of salt
- 2 teaspoons of cocoa
- 1 teaspoon of cinnamon
- coconut oil
- maple sirup as topping
- 100ml of double cream (whipped cream on the side)
Directions
Whisk together milk, spelt flour, eggs, salt, cocoa and cinnamon, but as I wrote above, the dought has to have this special texture, bit creamy, not too liquid not too thick. Lightly coat the frying pan with the coconut oil and cook until golden brown. Serve with maple sirup and whipped cream on the side.
