This weekend was again quite successful in terms of baking and I tried to prepare the traditional "Zopf". Sorry for the German word, but I seriously have no idea, what would be the english word and since it is typical in German speaking countries, I decided to leave it this way. Here in Switzerland, it is typically salty but in Slovakia, is more in the sweet direction. Tastes great just with butter (and jam) and is typical breakfast food.
Ingredients
- 450g flour
- 20g yeast
- 2 eggs
- 200 ml milk
- 70g sugar
- 50g butter
- pinch of salt
- handful of dried raisins
- topping: 1 egg, 1 spoon of milk, butter
Directions
Put the yeast in warm butter with bit of sugar and let it grow. Separate the eggs yolks from egg whites and whisk the whites till its firm. Mix together the flour, yeast, melted butter, rest of sugar, salt and egg yolks. Add the whisked egg whites and the raisins. Let the dought grow on a warm place for at least 30 min. Cut it to two parts (one smaller and bigger) and cut each of them to three equal parts. We are going to prepare two braids as in the picture.
The smaller comes on the top. Let it for about 30 minutes to grow. Mix the egg and the milk and spread it on. Then bake it in the oven at 160°C for 30 minutes. When ready, melt down the butter and spread it on it. S
