St. Jacques Scallops and Avocado Salad

I personally prefer to eat seafood when I am on holidays somewhere near the beach. Since the closest beach to my home is around 600km away, I believe that the freshness of the products we can buy in our supermarkets is limited. That is the reason I almost never cook any seafood at home. (also to be honest I am not so good at it) But the last weekend was exceptional and I bought some fresh St. Jacques scallops and here is my creation. 



Ingredients

  • 8 pieces of St. Jacques scallops
  • 2 avocados 
  • 3 oranges
  • 250g rucola
  • basilic
  • 20g butter
  • salt and pepper
  • 2 teaspoons of honey
  • 2 teaspoons of balsamic vinegar

Directions

First, you will prepare the salad. Wash rucola, cut the avocados and 2.5 oranges to small pieces, mix together and season with salt and pepper. Take a small frying pan, melt down the butter and fry the chopped basilic in the butter for about a minute. Position the scallops on the pan and fry them from each side for about 1-2 mintues, they really dont need more time. Take them out of the pan but leave the pan on the fire. Add the honey, balsamic vinegar and juice from half of orange and let it boil for about 5 minutes - it will become more creamy and less liquidy. This is your dressing for the salad. Let it cool down a bit and mix it with the salad. Serve on the plates and position the scallops on the top.
