Crème de champignons

I dont know how about you but I love eating soups in winter, cold weather. And when I say soup I mean really thick cream. One of my favourite is crème de champignons which was our Saturday lunch and it was so good that I have to share my recipe with you! Also, you do not need to eat anything else, because it's really fulfiling! With these amounts you can have 2 main courses (quite big portion).


Ingredients

  • 500g champignons
  • 5 middle sized potatoes
  • 1 onion
  • 2 cloves of garlic
  • 300 ml of cream
  • 300 ml of milk
  • handful of persil
  • salt, pepper
  • 30g butter

Directions

Melt down butter in a pan and fry the chopped onions and garlic on it. Add the champignons and potatoes cut to smaller pieces. Cook it for about 2-3 minutes, flavour it with salt and pepper and the cream and milk. Let it boil for 10 minutes. Take out some potatoes and champignons on the side and put the rest into blender together with persil. Mix it till the cream is smooth. Serve on the plates with the potatoes and champingons and bit of persil in the middle.
