Carrot salad

As you probably noticed, lately I have been baking a lot... and someone has to eat it of course... so I noticed that my belly started to grow dangerously and decided to make a healthy break :) Here is ony my healthy dinner recipes, tasty and very well seasoned carrot salad. This portion will be sufficient for 2-3 people (depending on how much are they hungry :) ).



Ingredients

  • 3 bigger carrots
  • 1 can of corn
  • 100g of cheese (emmentaler, appenzeller, gruyere...)
  • 2 spoons of olive oil
  • 2 spoons of mustard
  • salt and pepper
  • chilli

Directions

Clean the carrots and use the food processor to grate them. Cut the cheese into smaller pieces and mix together with carrots and corn. Prepare the dresssing - whisk together mustard with salt, pepper and chillies and slowly add the olive oil. Pour onto the salad. 

I recommend to serve it with delicious cider (Apfelmost). You can find it right now at your regional farmer market, as it is the highest season. It's pity you cannot smell it from the my blog :)
