New potatoes with champignons

Another inspiration for a fast and delicous vegetarian dinner, using the seasonal products. I love the time of new potatoes and this is one of recipes I like :) a lot!! :)




Ingredients

  • 500g of small new potatoes
  • 250g of champignons
  • 1 big onion
  • handfull of fresh parsley (dont save on it)
  • salt and pepper
  • 50g butter

Directions

Wash the potatoes but dont peel them. Cut them into approximately 1cm wide pices and cook them in salty water (should take from 8-12 min, but check regularly). On a frying pan, melt down the butter, add chopped onions and wait till it has the transparent look. Add champignons, also cut to smaller pieces and fried together for a while. In the end add the cooked potatoes with chopped parsley and fried it together for another 2-3 minutes. Add salt and pepper.
