Raspberry cake

I just love to bake (much more than cooking) so I am bringing to you today again something sweet :) This is super simple summer dessert, very refreshing, and you can use of course different type of fruits, or even mix fruits, really do as you like :)





Ingredients


  • 3 eggs
  • 150g sugar
  • 150g flour
  • 150g butter
  • 1 spoon of baking powder
  • 250g mascarpone
  • 250ml of double cream
  • 1 vanilla sugar
  • 2 spoons of sugar
  • 500g raspberries

Directions

First of all, you will need to start working on your pastry. Separe the egg yolk from the white and whisk the white of the egg in a mixer. Then mix together the other ingredients (sugar, flour, butter, yolks and baking powder) and very gently add the egg whites. You will need a round baking form. Put a baking paper on the bottom and pour in the pastry mixture. Bake it in the oven at 180°C for around 30 min, but check regularly. Take it out from the oven and after cooling down, cut the pastry in two pieces horizontally. 

Prepare the white cream - whisk the double cream, then slowly add (by hand) mascarpone, sugar and vanilla sugar. Spread the cream on both internal parts of the pastry (keep some for the top), and start adding raspberries only on one part. Then cover it with the top and spread some more cream on the top and decorate with remaining raspberries, or leave it like that in case you ate them all :) I recommend to keep it in the fridge for one hour, till it settles down.
