Express Green Pea Soup

I promise you, this is going to be the fastest soup ever!!!! Probably it is not the most sophisticated recipe, but if you are craving for something warm AND tasty, and your fridge is empty, then this is the recipe for you (everyone has green peas in the freezer and pesto at home). 



Ingredients

(serves 2 people)
  • 500g frozen green peas
  • 3 spoons of pesto
  • 1 shallot (optionally onion)
  • butter
  • 4 spoons of creme fraîche
  • salt and pepper

Directions

Melt down the butter in a pan and fry the chopped shallot. Add the frozen peas, fry for a while and pour around 500ml of water into the pan. Add the pesto, salt and pepper. Let it boil for around 2-3 minutes and then blend until smooth. Serve with two spoons of creme fraîche.
