Croquant aux amandes



I spent last weekend in France visiting my new family in law and we ate and drank a lot!! As always :) But, I did not forget about my blog and I have for you two new recipes, directly from sunny Provence! Today, I am going to show you how to prepare so called "Croquant aux amandes" (english vocabulary says it should be "crunchy with almonds". Very simple and an excellent extra touch to serve with coffee or tea. 






Ingredients

  • 2 mugs of almonds
  • 1 mug of flour
  • 1 mug of sugar
  • 3 eggs
  • pinch of salt

Directions

Mix the almonds, flour, sugar, eggs and salt together. You will get very sticky dow. Put a sheet of baking paper on a baking tin, and pour the mixture on it. Spred it evenly (it should be 1-2 cm tall). Bake it for about 30 minutes at 160°C (check regularly, you want to achieve nice brown-golden colour). Take it out and cut immediately (later, it wont be possible to anymore).
