I just love simple, fast and yet delicious desserts and this panna cotta is one of them. I would never think that it is actually that easy. It is perfect for summer, not too sweet and perfectly refreshing. I used the little jars I got here in Switzerland for serving and transporting. If you decorate them little bit, you can even give your panna cotta to someone as a gift! :)
Ingredients
Panna Cotta
- 1 1/2 mug of milk
- 1 1/2 mug of double cream
- 1/3 mug of brown sugar
- vanilla essence
- gelatine (10 sheets)
Nectarine Compote
- 8 nectarines (peeled and cut into small pieces)
- 2 spoons of brown sugar
- lime juice (1/2 lime)
- 2 spoons of butter
Directions
Put the gelatin sheets into milk and warm it up on a small fire (it cannot boil, it should be temperature comfortable enough to put your finger in). Check your gelatin for the amount (mine is 12 sheets per liter of liquid). Wait till it melts down, add the sugar and vanilla essence and again wait till it dissolves. In the end add the double cream and mix everything together. Take it from fire and pour it in forms or jars or glasses, whatever you have ready. Keep it in the fridge for at least 2 hours.
On the side you can prepare nectarine compote (any fruit goes well, especially red fruits, which are bit sour). Melt down the butter on a pan, add nectarines, sugar, lime juice and let it cook for about 10 minutes. Then let the mixture cool down. Once the panna cotta is hard enough, you can add the compote on the top of it.
