This time, it is going to be something sweet again :) I love baking much more than cooking and during the last weekend I created this wonderful summer cake. Use any kind of berries you have currently at home. I needed to have something quick, so I used the ready-made shortpastry. Otherwise, I do it myself and you can find the recipe here:

Ingredients
- shortpastry
- 500g strawberries
- 250g raspberries
- 250ml creme fraiche
- 250ml double cream (whipped cream)
- 2 vanilla sugars
- 2 spoons of powder sugar
- gelatin
- 2 spoons of maple syrup
Directions
As I mentioned below, this time I used bought shortpastry but normally in the beginning you prepare your pastry and let it cool down. The next layer is creamy layer. Whip the doulbe cream with vanilla sugar and very gently mix in the creme fraiche and powder sugar. Spread the cream on the cold pastry. Then add the fruits on the top of it as you like but keep few of the fruits on the side. Last bit is the gelatin. Take the remaining fruits and add one glass (2dcl) of cold water and blend it with the hand blender. Add the gelatin (read the label for the appropriate amount, normally is 12 sheets for 1l of water) and add it gently and slowly on the top of the fruits. Keep the cake in the fridge for at least 2 hours.
