Yellow Chicken Curry

My dear readers, today I am going to present you one of the recipes I mastered. I was working on it the whole winter trying to find the perfect balance of taste and to reproduce the amazing taste of curry you normally get in European restaurants. You really have to try this and I am pretty sure, you will love it the same way like I do...




Ingredients

(it serves 2-3 people)
  • 300 g chicken breast
  • yellow curry paste (2 spoons)
  • green beans (frozen are just fine)
  • 2 regular potatoes
  • 1 sweet potato
  • 1 onion
  • 2 cloves of garlic
  • ginger (cca 3 cm long)
  • 250 ml coconut milk
  • cayenne chilli
  • oil

Directions

Put some oil in the frying pan with deep bottom and wait until its hot. Add the onion cut into small pieces and wait until it is fried. Than add pressed garlic and ginger cut into very small pieces (or grated). Wait approximately 30 seconds and add two spoons of curry paste and mix into the onion and oil. When it is nicely connected, add cut chicken breast (normally I do pieces of around 2-3 cm) and fry it until its white. Then you can add the potatos (also cut into eatable pieces) and green beans (you don't need to defroze it). Fry it for a little while and you can add the coconut milk. Cover the frying pan and let cook on middle fire for about 15 min. When you stop the fire, taste it and if it is not enough spicy, you can use bit of curry. This curry can be served just alone (there are some potatoes in it) or you can serve it also with rice.
