Duck breast with honey sauce

It's been a long time since the last recipe because I was away for a month or so --> on my honeymoon! :) We went to Singapore and Bali and of course took some cooking classes for traditional balinese dishes - very very tasty! I will provide you with recipes later on! But this time, lets do some duck!! Me, personally, I am not such a big fan of duck but this recipe got me! I think that duck goes well with sweet, although the sauce is not too sweet, because there is a little twist! Give it a try! :)

Ingredients

  • 1 duck breast
  • salt and pepper
  • 4 spoons of honey
  • 3 spoons of balsamic vinegar

Directions

Very easy, take your duck breast and on the side where is the thick skin, make small cuts with your knife into the skin. Season the breast from both sides with salt and pepper. Take a frying pan, preheat it on medium-high heat and only when its hot, place the breast with the skin side on the bottom. Wait for 7 minutes (I covered the frying pan), but dont forget to reduce the heat after 3 minutes to medium-low. After the 7 minutes, turn the duck breast to the other side and cook it on medium-low heat for another 5 minutes. Take the breast out and wrap it in aluminium paper for about 5 minutes. You should have lot of fat in your frying pan, you can get rid of that, but dont clean the pan. Add 4 spoons of honey and 3 spoons of balsamic vinegar and scrape the rests on the pan as it cooks together. It shouldnt take longer than 5 minutes. Afterwards you add your duck again to the frying pan and turn it few times to coat it properly with your sauce. Lastly, you take out your duck and put it on a chopping board and cut small slices. Serve immediately!

As a side dish, I prepared basic salad with rucola, tomatoes and radishes, because it is summer, but you can do what you like and what do you think fits best with duck!
