Hello guys, I am back after short break with one of my most favourite recipes - couscous! I discovered couscous recently, I never knew any good recipes and one day I decided to change it! I was researching and researching on the internet till I finally came up with something, that could possibly work. And it did :) ! It is not super quick, as you would expect from couscous recipe, but definitely worth the time invested (count around 40-45min). With the ingredients, you will have enough for 4 people.
Ingredients
- 200g of couscous
- 2 zucchinis
- 250g of champignons
- 3 tomatoes
- 1 onion (I used red onion)
- 2 cloves of garlic
- handful of coriander
- handful of mint
- walnut oil (but can be also olive oil)
- salt and pepper
- half of lemon
Directions
Start your frying pan with walnut oil, add chopped onions and pressed garlic once it is preheated. Fry for a while and add zucchinis cut to small circles (or half of the circles) and mushrooms cut into 4-6 pieces. Fry it for a while, around 5-7 minutes. In a separate bowl, cut with your scissors coriander and mint, dont be afraid to use lot of it, it creates beautiful flavor. Then mix your herbs with the vegetables from the frying pan. Once this is done, use a suitable baking pan where to you move your mixture and cover it properly with aluminium paper. Keep it in the oven for about 20 min at around 200°C. In the meanwhile you can prepare your couscous (as written on the box, if its not, I always use the same amount of boiling water with salt and olive oil as the amount of couscous, covering it with a kitchen towel) and chop the tomatoes. In the end, just mix everything together, use the lemon juice, salt and pepper, eventually bit of chilli to adjust the couscous to your taste. I hope you will like it as much as I do! :)
