Heavenly chocolate cupcakes

My sister was visiting me and her boyfriend was supposed to join us as well. I haven’t met him before and my sister was telling me how much he likes to eat. We were thinking that we should probably prepare something special. So my hunt for the best chocolate cupcake started. I found couple of recipes and here is what I mixed together. The result were these amazing cupcakes, really sweet but FANTASTIC! If you love chocolate, you will love these cupcakes! Trust me! This recipes will make you around 32-35 pieces!



Ingredients

Cupcakes
*100 g milk chocolate
*35 dl coffee
*500 g sugar powder
*350 g flour
*150 g non-sweet cocoa powder
*1 package of baking powder (13g)
*3 eggs
*150 ml vegetable oil
*1 cup of crème fraiche (cca 200 g)
*1 package of vanilla sugar (20g) 

Frosting
*250 g unsalted butter
*100 g sugar powder
*50 g cocoa powder
*1 dcl of maple syrup
*200 g milk chocolate
*1 package of vanilla sugar (13g)


Directions

First of all, you have to start your oven, ideally to 150 °C. Then you can prepare your dough. Prepare a hot coffee and insert the chocolate and let it melt in the coffee. In another bowl, mix together the sugar, flour, vanilla sugar, cocoa and baking soda. Put your bowl on the side and whisk the eggs in a mixer (white and yellow together), then add the oil, crème fraiche and chocolate mixture. Then you can start mix the dry and wet part, by adding slowly small parts of the wet part into the dry part. Mix it until everything is nicely incorporated. I recommend using here a whisk (mixing by hand). Prepare your special baking tin for cupcakes, insert the cupcake baking cup and add the dough into every hole, until about 2/3. Insert the baking tin in the oven and let it bake for 30 minutes. Take it out afterwards and let it cool completely.

For the frosting (which is by the way amazing) I recommend to take out the butter one hour before you start baking at all. When it’s nice and soft, cut it to big pieces and to a mixer. Add the sugar, cocoa powder and mix it. You can start adding slowly the maple syrup, vanilla sugar and melted chocolate (be careful that it is not warm anymore, otherwise it will melt the butter and you don’t want to do that!). When everything is nicely incorporated, use the pastry bag for decorating your cupcakes!
